Every November during the last few days of the month, flower farms trim back most, if not all, of their rose bushes (especially bushes that grow varieties of red roses) - this is what is known as ‘the pinch’. They do this so that they can manage 2 harvests of roses in the days and weeks leading up to Valentine’s Day. The economics of it is quite simple… rose prices at Valentine’s Day are at a premium and the more they sell, the more they make.
Rose prices increase immediately following ‘the pinch’. Since the bushes are all trimmed back (again, especially bushes which grow varieties of red roses), there is limited availability of these roses during the months of December and January. Looking back to Economics 101: A lower supply with a higher demand pushes the prices upward.
